Instructions
Rinse the sushi rice under cold water until the water runs clear.
Cook the rice with water in a rice cooker or on the stove according to package instructions.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fold into the cooked rice.
Place a nori sheet on a sushi mat, shiny side down. Spread an even layer of rice over the nori, leaving a 1-inch border at the top.
Arrange cucumber, carrot, and avocado slices along the bottom edge of the rice.
Roll the sushi tightly using the mat, then slice into pieces with a sharp knife.
