Ingredients 

Main Ingredients

  • 20 pieces jumbo pasta shells
  • 1 tablespoon olive oil
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 4 cups kale, chopped
  • 1 cup vegan ricotta
  • 1 cup marinara sauce
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta shells according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  4. Add kale and cook until wilted. Season with salt and pepper.
  5. In a bowl, mix cooked kale with vegan ricotta.
  6. Stuff each shell with the kale-ricotta mixture.
  7. Spread a layer of marinara sauce in a baking dish. Place stuffed shells on top.
  8. Cover with remaining marinara sauce.
  9. Bake for 20-25 minutes until heated through.
