Vegan Stuffed Shells With Kale Recipe
Delicious vegan stuffed shells filled with a savory kale and ricotta mixture, baked in marinara sauce.

- 20 pieces jumbo pasta shells
- 1 tablespoon olive oil
- 1 piece onion, chopped
- 3 cloves garlic, minced
- 4 cups kale, chopped
- 1 cup vegan ricotta
- 1 cup marinara sauce
- to taste Salt and pepper
Preheat oven to 375°F (190°C).
Cook pasta shells according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
Add kale and cook until wilted. Season with salt and pepper.
In a bowl, mix cooked kale with vegan ricotta.
Stuff each shell with the kale-ricotta mixture.
Spread a layer of marinara sauce in a baking dish. Place stuffed shells on top.
Cover with remaining marinara sauce.
Bake for 20-25 minutes until heated through.
