Vegan Spinach Mac And Cheese

Main Ingredients
- 8 oz Elbow macaroni use gluten-free if needed
- 2 cups Fresh spinach chopped
- 1 cup Raw cashews soaked in water for 2 hours
- 1 cup Nutritional yeast
- 1 cup Unsweetened almond milk
- 1 tablespoon Lemon juice freshly squeezed
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
1. Cook the macaroni according to package instructions. Drain and set aside.
2. In a blender, combine soaked cashews, nutritional yeast, almond milk, lemon juice, garlic powder, onion powder, salt, and pepper. Blend until smooth.
3. In a saucepan, heat the cashew sauce over medium heat until it thickens, about 5 minutes.
4. Add the chopped spinach to the sauce and cook until wilted, about 2 minutes.
5. Combine the cooked macaroni with the sauce and spinach. Mix well.
6. Transfer the mixture to a baking dish and bake at 350°F (175°C) for 15 minutes.
