Ingredients 

Main Ingredients

  • 2 cups spelt flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup coconut oil melted
  • 1 cup brown sugar
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract
  • 1 cup vegan chocolate chips

Instructions 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the spelt flour, baking soda, and salt.
  3. In another bowl, mix the melted coconut oil and brown sugar until well combined. Add the almond milk and vanilla extract, and mix again.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the vegan chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
