Ingredients 

Main Ingredients

  • 8 cups Vegetable broth
  • 1 cup Sliced mushrooms shiitake or button
  • 1 cup Chopped bok choy
  • 2 cloves Garlic, minced
  • 1 tablespoon Grated ginger
  • 2 tablespoon Soy sauce
  • 1 tablespoon Miso paste
  • 200 g Ramen noodles
  • 1 cup Sliced carrots
  • 1 cup Sliced green onions

Instructions 

  1. 1. In a large pot, heat the vegetable broth over medium heat.
  2. 2. Add the sliced mushrooms, chopped bok choy, minced garlic, and grated ginger. Cook for about 5 minutes until vegetables are tender.
  3. 3. Stir in the soy sauce and miso paste until well combined.
  4. 4. Add the ramen noodles and cook according to package instructions.
  5. 5. Add the sliced carrots and green onions. Cook for an additional 2-3 minutes.
  6. 6. Serve hot and enjoy!
