Ingredients

  • 4 pieces Tortillas whole wheat or gluten-free
  • 1 cup Vegan cheese shredded
  • 1 cup Black beans cooked
  • 0.5 cup Corn cooked
  • 1 piece Avocado sliced
  • 1 tablespoon Olive oil

Instructions 

  1. Heat the skillet over medium heat and add olive oil.
  2. Place one tortilla in the skillet and sprinkle half of the vegan cheese on top.
  3. Add black beans, corn, and avocado slices evenly over the cheese.
  4. Sprinkle the remaining vegan cheese on top and cover with the second tortilla.
  5. Cook for 3-4 minutes on each side until the tortillas are golden brown and the cheese is melted.
  6. Remove from skillet, cut into wedges, and serve warm.
