Ingredients

  • 6 medium potatoes peeled and diced
  • 1 cup vegan mayonnaise
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup celery chopped
  • ½ cup red onion chopped
  • 2 tablespoon dill chopped

Instructions 

  1. 1. Boil the potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine the vegan mayonnaise, mustard, salt, and black pepper.
  3. 3. Add the cooled potatoes, celery, red onion, and dill to the bowl. Mix well to combine.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
