Main Ingredients
- 1 cup raw cashews soaked in water for at least 2 hours
- 1 cup diced pimentos drained
- ¼ cup nutritional yeast
- ¼ cup water
- 2 tablespoon lemon juice freshly squeezed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- to taste salt
- to taste black pepper
1. Drain and rinse the soaked cashews.
2. In a blender, combine cashews, nutritional yeast, water, lemon juice, garlic powder, onion powder, smoked paprika, salt, and black pepper. Blend until smooth.
3. Fold in the diced pimentos.
4. Adjust seasoning if needed. Serve chilled or at room temperature.
