- 1 cup Peanut butter
- 1 cup Sugar
- 1 teaspoon Vanilla extract
- 1 tablespoon Flaxseed meal mixed with 3 tablespoons water
- 1 cup All-purpose flour
- 1 teaspoon Baking soda
- 1 pinch Salt
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine peanut butter, sugar, and vanilla extract.
Add the flaxseed meal mixed with water and stir until well combined.
In another bowl, whisk together flour, baking soda, and salt. Gradually add to the peanut butter mixture.
Drop spoonfuls of dough onto the prepared baking sheet. Flatten each cookie with a fork, making a crisscross pattern.
Bake for 10-12 minutes or until edges are golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
