Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 500 g mushrooms, sliced
  • ½ cup vegetable broth
  • 1 cup coconut milk
  • 2 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoon water
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions 

  1. Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until soft.
  2. Add mushrooms and cook until they release their juices and start to brown.
  3. Pour in vegetable broth, coconut milk, and soy sauce. Bring to a simmer.
  4. Stir in cornstarch mixture and cook until the sauce thickens.
  5. Season with salt and pepper. Garnish with fresh parsley before serving.
