Ingredients 

Main Ingredients

  • 1 can chickpeas drained and rinsed
  • 1 cup rolled oats
  • ½ cup onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoon soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoon olive oil for frying

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a food processor, pulse the oats until they form a coarse flour.
  3. Add the chickpeas, onion, garlic, soy sauce, tomato paste, oregano, basil, salt, and pepper. Pulse until well combined but still slightly chunky.
  4. Form the mixture into 1-inch balls.
  5. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
  6. Transfer the meatballs to a baking sheet and bake for 15 minutes.
