Ingredients

  • ½ cup unsweetened soy milk
  • 1 cup neutral oil (like canola or sunflower)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon mustard
  • ½ teaspoon salt

Instructions 

  1. 1. Add soy milk, apple cider vinegar, mustard, and salt to a blender.
  2. 2. Blend on high speed for about 30 seconds.
  3. 3. With the blender running, slowly drizzle in the oil until the mixture thickens and emulsifies.
  4. 4. Taste and adjust seasoning if needed.
  5. 5. Transfer to a jar and refrigerate. It will thicken more as it chills.
