Ingredients 

Main Ingredients

  • 1 cup sun-dried tomatoes packed in oil
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk full-fat
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste

Instructions 

  1. 1. Heat the olive oil in a pot over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  2. 2. Add the sun-dried tomatoes and cook for another 2-3 minutes.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
  4. 4. Transfer the mixture to a blender and blend until smooth.
  5. 5. Return the blended soup to the pot. Stir in the coconut milk, dried basil, salt, and black pepper. Simmer for another 5 minutes.
  6. 6. Serve hot and enjoy!
