Ingredients 

Main Ingredients

  • 2 tablespoon Olive oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Corn kernels (fresh or frozen)
  • 3 cups Vegetable broth
  • 1 cup Coconut milk
  • 2 Potatoes, diced
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Smoked paprika

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Stir in the corn kernels, diced potatoes, vegetable broth, coconut milk, salt, black pepper, and smoked paprika.
  4. 4. Bring to a boil, then reduce heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  5. 5. Use a blender to blend a portion of the soup to create a creamy texture. Be careful with the hot liquid.
  6. 6. Return the blended soup to the pot, stir well, and adjust seasoning if needed.
  7. 7. Serve hot and enjoy!
