Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 tablespoon Curry Powder
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 2 cups Mixed Vegetables (carrots, bell peppers, broccoli)
  • 8 oz Pasta
  • to taste Salt and Pepper
  • 1 tablespoon Lime Juice
  • ¼ cup Fresh Cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, minced garlic, and minced ginger. Sauté until onion is translucent.
  3. Stir in curry powder and cook for another minute.
  4. Add coconut milk and vegetable broth. Bring to a simmer.
  5. Add mixed vegetables and cook until tender, about 10 minutes.
  6. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  7. Season the curry with salt, pepper, and lime juice.
  8. Serve the curry over the cooked pasta and garnish with fresh cilantro.
