Vegan Cobb Salad With Coconut Bacon

Salad Ingredients
- 4 cups Romaine lettuce, chopped
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- 1 cup Avocado, diced
- ½ cup Red onion, thinly sliced
- ½ cup Carrots, shredded
- ½ cup Chickpeas, cooked
Coconut Bacon
- 1 cup Coconut flakes
- 2 tablespoon Soy sauce
- 1 tablespoon Maple syrup
- 1 teaspoon Liquid smoke
Dressing
- ¼ cup Olive oil
- 2 tablespoon Lemon juice
- 1 tablespoon Dijon mustard
- 1 teaspoon Maple syrup
- to taste Salt and pepper
Preheat oven to 350°F (175°C).
In a mixing bowl, combine coconut flakes, soy sauce, maple syrup, and liquid smoke. Spread on a baking sheet and bake for 10 minutes, stirring halfway through. Let cool.
In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, avocado, red onion, carrots, and chickpeas.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, maple syrup, salt, and pepper.
Pour dressing over the salad and toss to combine.
Top salad with coconut bacon and serve immediately.
