Ingredients 

Main Ingredients

  • 4 large carrots peeled into thin strips
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon maple syrup
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon sea salt

Instructions 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Peel the carrots into thin strips using a vegetable peeler.
  3. In a mixing bowl, combine olive oil, soy sauce, liquid smoke, maple syrup, apple cider vinegar, and sea salt.
  4. Toss the carrot strips in the marinade until well coated.
  5. Spread the carrots in a single layer on the prepared baking sheet.
  6. Bake for 30 minutes, flipping halfway through, until the carrots are tender and slightly crispy on the edges.
  7. Let cool before serving. Enjoy your vegan carrot lox!
