Ingredients

  • 1 cup brown rice cooked
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup diced tomatoes fresh
  • 1 cup diced bell peppers any color
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup shredded lettuce
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions 

  1. 1. Cook the brown rice according to package instructions.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers and cook until softened, about 5 minutes.
  3. 3. Add the black beans, corn, chili powder, cumin, salt, and black pepper to the skillet. Cook for another 5-7 minutes, stirring occasionally.
  4. 4. Assemble the burrito bowls by dividing the cooked rice among four bowls. Top with the bean and corn mixture, diced tomatoes, shredded lettuce, guacamole, and salsa.
  5. 5. Serve immediately and enjoy!
