Ingredients 

Main Ingredients

  • 1 head Broccoli chopped
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic. Sauté until translucent.
  3. Add chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Remove from heat and let cool slightly. Blend the soup until smooth.
  5. Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
