Ingredients 

Main Ingredients

  • 1 cup Black Beans cooked and drained
  • 1 cup Diced Tomatoes fresh or canned
  • 1 cup Avocado diced
  • 1 cup Spinach fresh
  • 4 Tortillas large, whole wheat
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions 

  1. 1. Heat the olive oil in a frying pan over medium heat.
  2. 2. Add the black beans and diced tomatoes. Cook for 5 minutes.
  3. 3. Add the spinach and cook until wilted, about 2 minutes.
  4. 4. Season with salt and pepper.
  5. 5. Warm the tortillas in a separate pan or microwave.
  6. 6. Fill each tortilla with the cooked mixture and diced avocado.
  7. 7. Roll up the tortillas and serve warm.
