Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 tablespoon Olive Oil
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until translucent.
  2. Add turmeric and cumin, cook for another minute.
  3. Add cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 20 minutes.
  4. Use a blender to puree the soup until smooth. Return to pot.
  5. Stir in coconut milk, salt, and pepper. Heat through and serve.
