Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup mango diced
  • 1 cup pineapple diced
  • 1 cup red bell pepper diced
  • ¼ cup red onion finely chopped
  • ¼ cup cilantro chopped
  • 2 tablespoon lime juice freshly squeezed
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  3. 3. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
  4. 4. In a large mixing bowl, combine the cooled quinoa, mango, pineapple, red bell pepper, red onion, and cilantro.
  5. 5. In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
  6. 6. Pour the dressing over the salad and toss to combine.
  7. 7. Serve immediately or refrigerate for later.
