Ingredients 

Main Ingredients

  • 1 package Cheese tortellini about 10 ounces
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ½ cup Red onion thinly sliced
  • ¼ cup Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste
  • ¼ cup Fresh basil chopped

Instructions 

  1. 1. Cook the tortellini according to the package instructions. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and cooled tortellini.
  3. 3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  4. 4. Pour the dressing over the tortellini mixture and toss to coat evenly.
  5. 5. Garnish with fresh basil before serving.
