Ingredients

  • 6 Eggs
  • 1 cup Zucchini, sliced
  • 1 cup Cherry tomatoes, halved
  • ½ cup Onion, chopped
  • ¼ cup Milk
  • ½ cup Grated cheese (optional)
  • 1 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the onion and cook until soft.
  4. Add the zucchini and cherry tomatoes to the skillet and cook for a few minutes until they start to soften.
  5. Pour the egg mixture over the vegetables in the skillet. If using, sprinkle the grated cheese on top.
  6. Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the frittata is set and lightly golden on top.
  7. Let it cool slightly before slicing and serving.
