Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic, cook until softened.
Add tomatoes and vegetable broth, bring to a boil.
Reduce heat and simmer for 20 minutes.
Add basil leaves, salt, and pepper. Cook for another 5 minutes.
Use an immersion blender to puree the soup until smooth.
Serve hot.
