Tomato Basil Risotto

Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 2 tablespoon Olive oil
  • 1 Onion, finely chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken or vegetable broth kept warm
  • 2 cups Diced tomatoes fresh or canned
  • 1 cup Grated Parmesan cheese
  • ¼ cup Chopped fresh basil
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, and cook until softened.
  2. Add the Arborio rice and stir to coat the grains with oil. Cook for 2-3 minutes until the rice is lightly toasted.
  3. Begin adding the warm broth, one ladle at a time, stirring frequently. Allow the liquid to be absorbed before adding the next ladle of broth.
  4. After about 15 minutes, add the diced tomatoes. Continue adding broth and stirring until the rice is creamy and cooked through, about 20-25 minutes total.
  5. Stir in the grated Parmesan cheese and chopped basil. Season with salt and pepper to taste. Serve immediately.
