Ingredients 

Main Ingredients

  • 4 cups Chicken broth
  • 1 cup Shrimp peeled and deveined
  • 2 stalks Lemongrass cut into 2-inch pieces
  • 3 slices Galangal
  • 3 leaves Kaffir lime leaves torn
  • 2 cloves Garlic minced
  • 2 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 2 tablespoon Thai chili paste
  • 1 cup Mushrooms sliced
  • 1 cup Cherry tomatoes halved
  • 1 handful Cilantro chopped

Instructions 

  1. 1. In a pot, bring the chicken broth to a boil.
  2. 2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  3. 3. Add garlic, fish sauce, lime juice, and Thai chili paste. Stir well.
  4. 4. Add shrimp, mushrooms, and cherry tomatoes. Cook until shrimp is done, about 3-4 minutes.
  5. 5. Garnish with chopped cilantro before serving.
