Main Ingredients
- 1 block Extra firm tofu drained and pressed
- 2 tablespoon Olive oil
- 1 Onion diced
- 2 cloves Garlic minced
- 1 Red bell pepper diced
- 1 can Chipotle peppers in adobo sauce use 1-2 peppers and some sauce
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Oregano
- 1 cup Tomato sauce
- 1 cup Vegetable broth
- to taste Salt and pepper
1. Heat olive oil in a skillet over medium heat.
2. Add diced onion and cook until translucent.
3. Add minced garlic and diced red bell pepper, cook for another 5 minutes.
4. Crumble the tofu into the skillet and cook until lightly browned.
5. In a blender, combine chipotle peppers, cumin, paprika, oregano, tomato sauce, and vegetable broth. Blend until smooth.
6. Pour the sauce into the skillet with the tofu mixture. Simmer for 15-20 minutes.
7. Season with salt and pepper to taste. Serve hot.
