Ingredients 

Main Ingredients

  • 1 block Extra firm tofu drained and pressed
  • 2 tablespoon Olive oil
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 Red bell pepper diced
  • 1 can Chipotle peppers in adobo sauce use 1-2 peppers and some sauce
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 1 cup Tomato sauce
  • 1 cup Vegetable broth
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add diced onion and cook until translucent.
  3. 3. Add minced garlic and diced red bell pepper, cook for another 5 minutes.
  4. 4. Crumble the tofu into the skillet and cook until lightly browned.
  5. 5. In a blender, combine chipotle peppers, cumin, paprika, oregano, tomato sauce, and vegetable broth. Blend until smooth.
  6. 6. Pour the sauce into the skillet with the tofu mixture. Simmer for 15-20 minutes.
  7. 7. Season with salt and pepper to taste. Serve hot.
