Ingredients 

Salad

  • 8 oz rice noodles
  • 1 cup shredded carrots
  • 1 cup red bell pepper, thinly sliced
  • ½ cup chopped cilantro
  • ¼ cup chopped green onions
  • ¼ cup crushed peanuts

Dressing

  • ¼ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • 2 tablespoon water to thin the dressing

Instructions 

  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooked noodles, shredded carrots, red bell pepper, cilantro, green onions, and crushed peanuts.
  3. In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, grated ginger, minced garlic, and water until smooth.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
