Thai Peanut Noodle Bowl Recipe

Main Ingredients
- 8 oz Rice noodles
- 1 cup Shredded carrots
- 1 cup Red bell pepper, thinly sliced
- ½ cup Chopped green onions
- ¼ cup Chopped cilantro
- ¼ cup Chopped peanuts
Peanut Sauce
- ½ cup Peanut butter
- 2 tablespoon Soy sauce
- 1 tablespoon Rice vinegar
- 1 tablespoon Honey
- 1 teaspoon Sesame oil
- 1 teaspoon Grated ginger
- 1 clove Garlic, minced
- ¼ cup Warm water
Cook the rice noodles according to package instructions. Drain and set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and warm water until smooth.
In a large pan, combine cooked noodles, shredded carrots, red bell pepper, and green onions. Pour the peanut sauce over the top and toss to coat evenly.
Serve the noodle bowl topped with chopped cilantro and peanuts.
