Ingredients 

Salad Ingredients

  • 2 cups Cooked Chicken Breast, shredded
  • 4 cups Mixed Greens
  • 1 cup Shredded Carrots
  • 1 cup Sliced Cucumber
  • ¼ cup Chopped Cilantro

Dressing Ingredients

  • ¼ cup Peanut Butter
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Grated Ginger
  • 1 clove Garlic, minced
  • 2 tablespoons Water as needed to thin the dressing

Instructions 

  1. In a mixing bowl, whisk together all the dressing ingredients until smooth. Add water as needed to reach desired consistency.
  2. In a large bowl, combine the shredded chicken, mixed greens, shredded carrots, sliced cucumber, and chopped cilantro.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately and enjoy!
