Thai Peanut Chicken Salad

Salad Ingredients
- 2 cups Cooked Chicken Breast, shredded
- 4 cups Mixed Greens
- 1 cup Shredded Carrots
- 1 cup Sliced Cucumber
- ¼ cup Chopped Cilantro
Dressing Ingredients
- ¼ cup Peanut Butter
- 2 tablespoons Soy Sauce
- 1 tablespoon Rice Vinegar
- 1 tablespoon Honey
- 1 teaspoon Sesame Oil
- 1 teaspoon Grated Ginger
- 1 clove Garlic, minced
- 2 tablespoons Water as needed to thin the dressing
In a mixing bowl, whisk together all the dressing ingredients until smooth. Add water as needed to reach desired consistency.
In a large bowl, combine the shredded chicken, mixed greens, shredded carrots, sliced cucumber, and chopped cilantro.
Pour the dressing over the salad and toss to combine.
Serve immediately and enjoy!
