Ingredients

  • ¼ cup fresh cilantro, chopped
  • 1 red chili, thinly sliced optional

Dressing

  • 3 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil

Instructions 

  1. In a mixing bowl, combine cucumbers, red onion, cilantro, and red chili.
  2. In a small bowl, whisk together rice vinegar, sugar, soy sauce, and sesame oil until the sugar is dissolved.
  3. Pour the dressing over the cucumber mixture and toss to combine.
  4. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
