Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 tablespoon Red Curry Paste
  • 1 can Coconut Milk
  • 2 cups Vegetables (bell peppers, carrots, etc.), chopped
  • 1 cup Vegetable Broth
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Lime Juice
  • 1 cup Fresh Basil, chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened.
  2. Add the garlic, ginger, and red curry paste. Cook for another minute.
  3. Pour in the coconut milk and vegetable broth. Bring to a simmer.
  4. Add the chopped vegetables and cook until tender.
  5. Stir in the soy sauce, brown sugar, and lime juice. Cook for another 5 minutes.
  6. Remove from heat and stir in the fresh basil. Serve hot.
