Ingredients

  • 2 cucumbers, thinly sliced
  • 1 cup coconut milk
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 tablespoon chopped cilantro
  • 1 tablespoon chopped mint
  • 1 teaspoon chopped red chili optional

Instructions 

  1. 1. In a mixing bowl, whisk together the coconut milk, lime juice, fish sauce, and sugar until well combined.
  2. 2. Add the sliced cucumbers to the bowl and toss to coat them in the dressing.
  3. 3. Sprinkle the chopped cilantro, mint, and red chili (if using) over the salad and toss gently.
  4. 4. Serve immediately or chill in the refrigerator for 10-15 minutes before serving.
