Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 red bell pepper, sliced
  • 1 lb chicken breast, thinly sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 cup mushrooms, sliced
  • 1 carrot, sliced
  • 1 green onion, chopped
  • 1 handful cilantro, chopped

Instructions 

  1. Heat the oil in a pot over medium heat. Add the onion, garlic, and ginger. Cook until fragrant.
  2. Add the red bell pepper and chicken. Cook until the chicken is no longer pink.
  3. Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Add the coconut milk, fish sauce, lime juice, and brown sugar. Stir well.
  5. Add the mushrooms and carrot. Simmer for another 5 minutes.
  6. Garnish with green onion and cilantro before serving.
