Ingredients 

Macaron Shells

  • 100 g almond flour
  • 100 g powdered sugar
  • 2 large egg whites room temperature
  • 50 g granulated sugar
  • 1 teaspoon tea leaves finely ground

Filling

  • 100 g butter softened
  • 100 g powdered sugar
  • 1 teaspoon tea leaves finely ground

Instructions 

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Sift almond flour and powdered sugar together. Set aside.
  3. In a mixing bowl, beat egg whites until foamy. Gradually add granulated sugar and beat until stiff peaks form.
  4. Fold in the almond flour mixture and ground tea leaves gently until well combined.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheet.
  6. Tap the baking sheet on the counter to release any air bubbles. Let sit for 15-20 minutes until a skin forms on the surface.
  7. Bake for 15 minutes. Let cool completely before removing from the parchment paper.
  8. For the filling, beat butter until creamy. Gradually add powdered sugar and ground tea leaves, mixing until smooth.
  9. Pipe the filling onto one macaron shell and sandwich with another shell. Repeat with remaining macarons.
