Tart Cherry Tartelettes Recipe

Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 egg yolk
  • 2-3 tablespoon cold water

Filling

  • 2 cups tart cherries pitted
  • ½ cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs.
  3. Add egg yolk and cold water, mix until dough comes together. Press into tart pans.
  4. Bake crusts for 10 minutes. Let cool.
  5. In a saucepan, combine cherries, sugar, cornstarch, and vanilla. Cook until thickened.
  6. Fill tart crusts with cherry mixture. Bake for another 15 minutes.
  7. Let cool before serving.
