Tart Cherry Tabbouleh
A refreshing twist on traditional tabbouleh with tart cherries.

Main Ingredients
- 1 cup bulgur wheat cooked and cooled
- 1 cup fresh parsley finely chopped
- ½ cup fresh mint finely chopped
- 1 cup tart cherries pitted and halved
- 1 cup cucumber diced
- ¼ cup olive oil
- ¼ cup lemon juice freshly squeezed
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper freshly ground
In a large mixing bowl, combine the cooked bulgur wheat, parsley, mint, tart cherries, and cucumber.
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
Pour the dressing over the bulgur mixture and toss to combine.
Let the tabbouleh sit for at least 15 minutes before serving to allow the flavors to meld.
