Ingredients 

Main Ingredients

  • 1 cup bulgur wheat soaked in hot water for 15 minutes
  • 1 bunch fresh parsley finely chopped
  • ½ bunch fresh mint finely chopped
  • 2 medium tomatoes diced
  • 4 stalks green onions finely chopped
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh lemon juice
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Soak the bulgur wheat in hot water for 15 minutes, then drain and squeeze out excess water.
  2. 2. In a large mixing bowl, combine the soaked bulgur, chopped parsley, mint, tomatoes, and green onions.
  3. 3. Add the olive oil, lemon juice, salt, and black pepper. Toss well to combine.
  4. 4. Taste and adjust seasoning if needed. Serve chilled or at room temperature.
