Ingredients 

Main Ingredients

  • 1 cup bulgur wheat
  • 1 ½ cups boiling water
  • 1 cup finely chopped parsley
  • ½ cup finely chopped mint
  • ½ cup diced tomatoes
  • ¼ cup diced cucumber
  • ¼ cup diced red onion
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • Salt and pepper to taste

Instructions 

  1. Place bulgur wheat in a bowl, pour boiling water over it, cover, and let it sit for 15 minutes.
  2. Fluff the bulgur with a fork and let it cool.
  3. In a large bowl, combine parsley, mint, tomatoes, cucumber, and red onion.
  4. Add the cooled bulgur to the bowl.
  5. Drizzle olive oil and lemon juice over the mixture, and season with salt and pepper.
  6. Toss everything together until well combined.
