Ingredients 

Main Ingredients

  • 2 medium Sweet potatoes peeled and diced
  • 1 large Onion diced
  • 2 cloves Garlic minced
  • 1 can Black beans drained and rinsed
  • 1 can Diced tomatoes with juice
  • 1 cup Vegetable broth
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil.
  2. 2. Add the diced onion and cook until soft, about 5 minutes.
  3. 3. Stir in the minced garlic and cook for another minute.
  4. 4. Add the diced sweet potatoes, black beans, diced tomatoes, and vegetable broth.
  5. 5. Stir in the chili powder, cumin, paprika, salt, and black pepper.
  6. 6. Bring the mixture to a boil, then reduce the heat and simmer for about 30 minutes, or until the sweet potatoes are tender.
  7. 7. Taste and adjust seasoning if necessary. Serve hot.
