Sweet Potato Vegan Alfredo Recipe

Main Ingredients
- 2 cups sweet potatoes, peeled and cubed
- 1 cup unsweetened almond milk
- ¼ cup nutritional yeast
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- to taste salt and pepper
1. Boil the sweet potatoes until tender, about 15 minutes. Drain and set aside.
2. In a blender, combine the cooked sweet potatoes, almond milk, nutritional yeast, olive oil, garlic, and lemon juice. Blend until smooth.
3. Pour the sauce into a saucepan and heat over medium heat until warmed through. Season with salt and pepper to taste.
4. Serve over your favorite pasta and enjoy!
