Sweet Potato Tahini Crostini
Delicious and healthy crostini topped with sweet potato and tahini.

Main Ingredients
- 2 large Sweet Potatoes peeled and sliced
- 2 tablespoon Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 loaf Baguette sliced
- 3 tablespoon Tahini
- 1 tablespoon Lemon Juice
- 1 clove Garlic minced
- 2 tablespoon Fresh Parsley chopped
Preheat your oven to 400°F (200°C).
Toss the sweet potato slices with olive oil, salt, and pepper.
Spread the sweet potato slices on a baking sheet and roast for 20 minutes, or until tender.
While the sweet potatoes are roasting, toast the baguette slices in the oven for 5-7 minutes.
In a small bowl, mix tahini, lemon juice, and minced garlic.
Spread the tahini mixture on the toasted baguette slices.
Top each slice with a piece of roasted sweet potato and sprinkle with fresh parsley.
