Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and sliced
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 loaf Baguette sliced
  • 3 tablespoon Tahini
  • 1 tablespoon Lemon Juice
  • 1 clove Garlic minced
  • 2 tablespoon Fresh Parsley chopped

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the sweet potato slices with olive oil, salt, and pepper.
  3. Spread the sweet potato slices on a baking sheet and roast for 20 minutes, or until tender.
  4. While the sweet potatoes are roasting, toast the baguette slices in the oven for 5-7 minutes.
  5. In a small bowl, mix tahini, lemon juice, and minced garlic.
  6. Spread the tahini mixture on the toasted baguette slices.
  7. Top each slice with a piece of roasted sweet potato and sprinkle with fresh parsley.
