  • 4 Sweet Potatoes medium-sized
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Shredded Cheese your choice
  • 1 tablespoon Chopped Parsley for garnish

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes. Cut them into bite-sized pieces.
  3. In a mixing bowl, toss the sweet potatoes with olive oil, salt, and black pepper.
  4. Spread the sweet potatoes evenly on a baking sheet.
  5. Bake in the preheated oven for 30-35 minutes, or until tender and slightly crispy.
  6. Remove the sweet potatoes from the oven and sprinkle shredded cheese on top.
  7. Return to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  8. Garnish with chopped parsley before serving.
