Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until fragrant.
  2. 2. Add the sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot. Stir in the coconut milk, cumin, and paprika. Season with salt and pepper to taste. Simmer for another 5 minutes.
  5. 5. Serve hot and enjoy!
