Ingredients 

Main Ingredients

  • 2 large Sweet Potatoes peeled and cubed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Red Onion diced
  • 1 cup Bell Pepper diced
  • 1 cup Corn cooked
  • 2 tablespoon Lime Juice freshly squeezed
  • ¼ cup Cilantro chopped

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast for 25-30 minutes, until tender and slightly caramelized. Let cool.
  4. In a large mixing bowl, combine roasted sweet potatoes, red onion, bell pepper, corn, lime juice, and cilantro. Toss gently to mix.
  5. Serve immediately or chill in the fridge for later.
