  • 1 cup Quinoa
  • ½ cup Cotija Cheese, crumbled
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, until tender.
  3. While the sweet potatoes are roasting, cook the quinoa according to package instructions.
  4. In a large mixing bowl, combine the cooked quinoa, roasted sweet potatoes, and crumbled cotija cheese. Mix well.
