Ingredients 

Main Ingredients

  • 2 medium Sweet Potatoes peeled and diced
  • 1 cup Pomegranate Seeds
  • 1 baguette French Baguette sliced into ½ inch pieces
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, salt, and pepper in a mixing bowl.
  3. Spread the sweet potatoes on a baking sheet and roast for 20 minutes, or until tender.
  4. While the sweet potatoes are roasting, toast the baguette slices in the oven for about 5-7 minutes, until golden brown.
  5. Once the sweet potatoes are done, let them cool slightly.
  6. Top each baguette slice with a spoonful of roasted sweet potatoes and a sprinkle of pomegranate seeds.
  7. Serve immediately and enjoy!
