Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup flour
  • 2 eggs
  • ½ cup milk
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 pinch salt
  • Butter or oil for cooking

Instructions 

  1. In a large bowl, mix mashed sweet potatoes, eggs, and milk until smooth.
  2. In another bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  4. Heat a skillet over medium heat and add butter or oil.
  5. Pour ¼ cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.
