Ingredients 

Main Ingredients

  • 2 large sweet potatoes sliced thin
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 cup black beans cooked
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1 cup sour cream
  • 1 tablespoon cilantro chopped

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato slices with olive oil and salt.
  3. Arrange the sweet potato slices in a single layer on the baking sheet.
  4. Bake for 20-25 minutes, flipping halfway through, until crispy.
  5. Remove from oven and top with black beans and shredded cheese.
  6. Return to oven for 5 minutes, until cheese is melted.
  7. Top with salsa, avocado, sour cream, and cilantro. Serve immediately.
