Main Ingredients
- 2 large sweet potatoes sliced thin
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 cup black beans cooked
- 1 cup shredded cheese
- 1 cup salsa
- 1 cup sour cream
- 1 tablespoon cilantro chopped
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the sweet potato slices with olive oil and salt.
Arrange the sweet potato slices in a single layer on the baking sheet.
Bake for 20-25 minutes, flipping halfway through, until crispy.
Remove from oven and top with black beans and shredded cheese.
Return to oven for 5 minutes, until cheese is melted.
Top with salsa, avocado, sour cream, and cilantro. Serve immediately.
